Have I got something special for you! This time of year makes me want to head to the kitchen to dig out my old recipes, and also to try new recipes! I was offered "A Century of Flavor" cookbook from Nielson-Massey Vanillas for review, and I am so thrilled with it. Not only is it gorgeous, but the recipes are absolutely mouth-watering.

This cookbook is a beauty! It is a hard-cover book with 127 pages, and is filled with heavenly recipes. It includes sections such as: On the Side, Now This is Dinner!, Fresh Baked, It's Always Better with Vanilla and even the history of Nielsen-Massey. The color photos in the cookbook are absolutely stunning. This recipe was absolutely delicious:
CREAMY VANILLA SWEET POTATOES:
4 medium sweet potatoes
4 medium sweet potatoes
~canola oil
2 ounces cream cheese, softened
½ cup (1 stick) butter, softened
¼ cup real maple syrup
1 tablespoon Nielsen-Massey
Tahitian Pure Vanilla Extract
½ teaspoon salt
¼ teaspoon pepper
5 strips bacon, crisp-cooked
and crumbled
Preheat the oven to 400 degrees.
Wash the sweet potatoes and lightly coast the skins with canola oil.
Pierce each potato several times with a fork. Place the potatoes on
a foil-lined baking sheet. Bake for 1 hour or until fork tender.
Cut the hot potatoes into halves.
Scoop the potato pulp into a mixing bowl, discarding the skins. Beat
at medium speed for 1 minute using an electric mixer. Add the cream
cheese, butter, syrup, vanilla extract, salt and pepper. Whip until
creamy.
Spoon the whipped potatoes
into six ramekins coated with nonstick cooking spray and top with the
bacon. Place the ramekins on a baking sheet. Bake in a preheat 375-degree
oven for 5 to 8 minutes or until heated through. Alternatively, they
may be reheated in a microwave for 2 to 3 minutes.
Serves 6

Hmmm my favorite recipe that uses vanilla? Well this is kind of a trick, not exactly a recipe. But I've been dying to try it for years: To add leftover vanilla bean pods to your sugar...infuses the vanilla with the sugar, which is supposed to be a delicious twist. Will that count? LOL

Homemade chocolate chip cookies made with real vanilla are ny fave.
My favorite recipe is my old fashion sugar cookies. You know the crispy kind of sugar ccokies with a hint of vanilla in them. 1 tsp. is all I use.

I love, love, love vanilla during the holidays! It doesn't smell like home until you crack open that bottle of vanilla and get cooking. A staple at our house at any holiday meal is homemade vanilla ice cream. YUM!

Oh it's a fabulous cheese cake I make and the hint of vanilla in it really sends it over the top. Happy holidays!
I have a special bottle of olive oil with a vanilla bean in it and use it on a lot of root vegtables. can't cook without my vanilla. I make my own Chai tea mix and use vanilla.
VANILLA FUDGE
2 tbsp. butter
3 c. sugar
1/4 c. corn syrup
1/2 tsp. salt
1 c. light cream
1/2 c. milk
2 tsp. vanilla
1 c. chopped nuts, optional
Place all ingredients EXCEPT vanilla and nuts in saucepan. Cook over medium heat, stirring constantly until mixture boils. Continue cooking, stirring occasionally to soft ball stage, 238 degrees, or until a small amount of syrup forms a soft ball when tested in very cold water. Remove from heat. Add vanilla. Cool to lukewarm, 110 degrees. Beat until fudge begins to thicken and loses its gloss. Fold in nuts. Quickly spread into a well buttered 8 inch square pan.
