A Century of Flavor Cookbook Review and Giveaway (5 winners!)

A Century of Flavors cookbook giveaway

{CLOSED}
Have I got something special for you! This time of year makes me want to head to the kitchen to dig out my old recipes, and also to try new recipes! I was offered "A Century of Flavor" cookbook from Nielson-Massey Vanillas for review, and I am so thrilled with it. Not only is it gorgeous, but the recipes are absolutely mouth-watering.

About the cookbook and Nielsen-Massey Vanillas:

The delightful aroma of the kitchen during the holidays – with smells of cinnamon, peppermint, chocolate and vanilla – is a scent that many associate with long lived memories. The holiday season is a perfect time to create flavorful memories with your family and loved ones. Nielsen-Massey Vanillas A Century of Flavor cookbook provides moms with a variety of holiday recipes. Vanilla Carmel Corn Crunch can be made with your young chef, while Creamy Vanilla Sweet Potatoes is a perfect side to your family’s main course.

This vanilla-inspired cookbook, published by family-owned Nielsen-Massey Vanillas, celebrates the exciting nuances of one of America’s most-loved and versatile ingredients – pure vanilla. It is filled with 50 of the most tantalizing recipes, highlighting the intricate, yet delicate flavors of pure vanilla and is written for the novice cook as well as the seasoned chef.

This cookbook is a beauty!  It is a hard-cover book with 127 pages, and is filled with heavenly recipes. It includes sections such as: On the Side, Now This is Dinner!, Fresh Baked, It's Always Better with Vanilla and even the history of Nielsen-Massey.  The color photos in the cookbook are absolutely stunningThis recipe was absolutely delicious:

Nielsen-Masseey Vanilla a century of flavors cookbook review

CREAMY VANILLA SWEET POTATOES:

4 medium sweet potatoes
~canola oil
2 ounces cream cheese, softened
½ cup (1 stick) butter, softened
¼ cup real maple syrup
1 tablespoon Nielsen-Massey Tahitian Pure Vanilla Extract
½ teaspoon salt
¼ teaspoon pepper
5 strips bacon, crisp-cooked and crumbled
Preheat the oven to 400 degrees. Wash the sweet potatoes and lightly coast the skins with canola oil. Pierce each potato several times with a fork. Place the potatoes on a foil-lined baking sheet. Bake for 1 hour or until fork tender.

Cut the hot potatoes into halves. Scoop the potato pulp into a mixing bowl, discarding the skins. Beat at medium speed for 1 minute using an electric mixer. Add the cream cheese, butter, syrup, vanilla extract, salt and pepper. Whip until creamy.
Spoon the whipped potatoes into six ramekins coated with nonstick cooking spray and top with the bacon. Place the ramekins on a baking sheet. Bake in a preheat 375-degree oven for 5 to 8 minutes or until heated through. Alternatively, they may be reheated in a microwave for 2 to 3 minutes.

Serves 6

This would be a perfect dish to go along with your holiday dinners.  If this isn't enough to make you hungry, you might like to try the Crab Cakes with Vanilla Remoulade, the Apricot Mango BBQ Ribs or Marcy's Vanilla Sugar-Crusted Scones.  Mmmmm - I cannot wait to try them all.

The recipes are simple and easy to follow, which I really love.  You can order the A Century of Flavors cookbook online, or you can win one here!

Hmmm my favorite recipe that uses vanilla? Well this is kind of a trick, not exactly a recipe. But I've been dying to try it for years: To add leftover vanilla bean pods to your sugar...infuses the vanilla with the sugar, which is supposed to be a delicious twist. Will that count? LOL

VANILLA FUDGE

2 tbsp. butter
3 c. sugar
1/4 c. corn syrup
1/2 tsp. salt
1 c. light cream
1/2 c. milk
2 tsp. vanilla
1 c. chopped nuts, optional

Place all ingredients EXCEPT vanilla and nuts in saucepan. Cook over medium heat, stirring constantly until mixture boils. Continue cooking, stirring occasionally to soft ball stage, 238 degrees, or until a small amount of syrup forms a soft ball when tested in very cold water. Remove from heat. Add vanilla. Cool to lukewarm, 110 degrees. Beat until fudge begins to thicken and loses its gloss. Fold in nuts. Quickly spread into a well buttered 8 inch square pan.
