Oatmeal Scotchies - Courtesy of the Mrs.

A good friend of mine, Amy, from Coffee with the Mrs. shared this wonderful Quaker Oatmeal Scotchies recipe with me, and said it was okay to share it with all of you! This recipe was her husband's great aunt's recipe. I would love to hear your comments, so if you make them, please stop by and let me know how you liked them! THANK YOU AMY!





Quaker Oatmeal Scotchies

Preheat Oven 375 degrees
Serving Size:
4 dozen cookies Cook Time: 10 mins

1 cup (2 sticks) butter softened 3/4 cup granulated sugar
3/4 c br sugar, firmly packed 2 large eggs
1 teasp vanilla extract 1 1/4 cups all-purpose flour
1 teasp baking soda 1/2 teasp salt (optional)
3 cups Quaker® Oats (quick or old fashioned, uncooked)
1 2/3 c (11 oz. pkg.) Butterscotch Morsels

BEAT
butter and sugars in large bowl until creamy. Add eggs and vanilla extract; beat well. Add combined flour, baking soda and salt; mix well. Add oats and morsels; mix well.
DROP
dough by level tablespoonfuls onto ungreased cookie sheets.
BAKE
7 to 8 minutes for a chewy cookie or 9 to 10 minutes for a crisp cookie. I had to cook a little longer until t hey're very brown for them to hold together. I’m not sure if my oven is correct. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Store tightly covered

Salad Dressings - Oh my!

I love to experiment with different types of salad dressings and I was so happy this morning when I found three new recipes in the newspaper. I wanted to share them with you too:

SPINACH SALAD DRESSING:
1/2 cup veg. oil
1/4 cup vinegar
1/4 cup soy sauce
1 tsp freshly ground pepper
1/4 cup green onion minced
1/4 cup sesame seeds
2 cloves garlic, minced

Whisk together ingredients and let sit overnight for better taste.

HONEY MUSTARD SALAD DRESSING:
6 ounces rice wine vinegar
6 Tablespoons honey
6 Tablespoons hot Chinese mustard
3 tablespoons veg. oil
Pinch of salt, Pinch of pepper

Mix all ingredients and serve.

CREAMY CITRUS GINGER SALAD DRESSING:
2 ounces nonfat plain yogurt
4 ounces orange juice
2 tablespoons lemon juice
1 tablespoon veg. oil
1 teaspoon ground ginger
1 teaspoon sugar
1 teaspoon ground pepper

Mix together all ingredients and service. Refrigerate any remaining portion.
