Fall Festival - Panko Breaded Pork Medallions Recipe!!

Today I wanted to share with you a yummy recipe that I have tried, from the "Make Ahead Meals for Mom" cookbook that I will be giving away during the Fall Festival!

PANKO BREADED PORK MEDALLIONS:

A crispy, baked dish the whole family will enjoy!

2 pork tenderloins (1 lb. each)
3 - 4 Tablespoons garlic and herb spreadable cheese
2 cups Italian Style panko crispy bread crumbs

~ A Day Ahead~

Spray a large sheet pan with nonstick spray; set aside. Rinse the port under cold water and pat dry with paper towels. Place one pork tenderloin on a large cutting board. Cut 1-inch slice medallions; set aside on a paper towel. Slice the second pork tenderloin in the same manner. Lay all of the port out on a paper towel, over with plastic wrap, and pound each piece with a kitchen mallet until all pieces are 1/4-inch thin. Using a butter knife, spread a very light coating of the spreadable cheese on each side of the medallions. Roll each slice in the bread crumbs. Place them on the sheet pan. Cover well with plastic wrap and refrigerate.

~ Cooking Directions~

Take the port out of the refrigerator 20-30 minutes before cooking. Preheat the oven to 400 degrees F. Uncover the pork, spray the tops of the pork with nonstick spray and bake for 30 minutes. Serves 6-7 people (makes about 14 medallions).

This sounds really good... I like that you can prepare it ahead, say on a weekend, then make them on a week night for dinner. Since there are only two of us in the house, I can have 2 dinners out of it. MMMMM
